These easy Mayonnaise Rolls are a lightning fast no yeast dinner roll recipe. Made with just 3 ingredients, and ready in just 20 minutes, they are the perfect last minute addition to your favorite soup or stew. These quick dinner rolls feature the addition of mayo, and use a muffin tin so you don't even have to shape the rolls. It just doesn't get any easier than this!

We eat A LOT of soup in my home throughout the Fall and Winter months. While I can eat these soups as-is day in and day out, other members of the family love the addition of some kind of roll, biscuit, or cracker. When I think of it in advance, I might make up a batch of my fluffy Snowflake Rolls, or maybe a batch of my Sourdough Drop Biscuits. But most times? Most times I totally forget about it until the soup is simmering and my husband is on his way home.

For days like this, we need a quick and easy no yeast, no rise roll recipe. And boy, do I have one for you! These Mayonnaise Rolls use just 3 INGREDIENTS, and require no rising and no yeast. They are a total cinch to make. Their relatively plain flavor pairs with soups and stews perfectly, and they are ready to go in the oven in just 5 minutes!

Why Add Mayonnaise to Breads and Rolls?

If you've never made mayonnaise from scratch, you may be surprised to know that it is actually a dairy free emulsion of eggs and oil. During tough economic times, like during The Great Depression of the 1930's, it could be very difficult to acquire certain foods. Oils, fats, and eggs were some of those foods. While many people were still living agrarian lifestyles and had their own eggs, Winter brought with it a shortage of this prized food, and so savvy homemakers got creative and started putting commercial foods to use.

One of those commercial foods was mayonnaise. I've see it used in breads, rolls, and even cakes! While this does sound peculiar, it really isn't when you consider the foundational elements of commercially prepared mayonnaise. And so, we saw the addition of newly commercialized foods to standard baked goods. I don't know about you, but I appreciate the inginuity!

An Easy Yeast Free Dinner Roll

Thankfully, many of us in North America don't typically have to worry about these sorts of shortages, however they still do happen (2020, anyone?), and so it's important to have a few tricks up your sleeve. That's why I'm sharing this SUPER simple Mayonnaise Roll recipe. No only does it use just 3 ingredients, (4 ingredients if you add a touch of sugar), but it's also a NO YEAST recipe with no rising time. Does it get any better than that? OH, and just 5 minutes to mix and 15 minutes to bake.

Ingredients

  • Self-rising flour: You will need about 2 cups of self-rising flour (also known as self-raising flour in the UK and Canada). This cannot be substituted cup for cup for all purpose flour, since self-rising flour contains leaveners and salt to help your rolls rise. See the "substitutions" section for an easy stand in.
  • Mayonnaise: ¼ cup of REAL mayonnaise is required to make these mayo rolls. Do not substitute for whipped dressing (aka Miracle Whip) as the recipe has not been tested for use with this product.
  • Milk: 1 cup of 2% or whole milk is the only other ingredient you'll need for these simple and easy rolls.

How to Make Rolls Using Mayonnaise

Preheat the oven to 375F and prepare a 12 cup muffin pan with paper liners.

Add the self-rising flour to a medium sized bowl. Whisk in the sugar (if using).

Add in the milk and the mayonnaise. Mix together with a light hand until well combined.

Use a large cookie scoop, or a heaping tablespoon to spoon the batter into the lined muffin pan, filling to ⅔ full with the sticky batter.

Bake in the preheated oven for 12-15 minutes, or until a toothpick comes out clean when inserted into the middle. Brush the rolls with melted butter, if desired.

Allow the rolls to cool in the pan for 5 minutes before removing them (still inside the liners) to a cooling rack.

Once the rolls are cool enough to touch, remove the paper liners from each of the mayonnaise rolls.

Serve warm with butter, or for using to dunk into your favorite soup or stew.

Substitutions

Self-rising flour substitute: Combine 2 cups of all purpose flour, 1 tablespoon of baking powder, and ½ teaspoon of salt. Whisk together or sift together to combine. Use in place of the self rising flour in any of your favorite recipes that call for it.

Mayonnaise: Do not substitute the mayonnaise for whipped dressing. The recipe has not been tested for this swap, and I do not recommend it. Since we are using just 3 ingredients, and a key ingredient is "mayonnaise" it's important to use the proper ingredients for the best possible results!

Tips for Success

  • Make sure to use muffin liners! This batter is REALLY sticky, and it may be very difficult to remove from a muffin tin. Particularly one that hasn't been greased liberally. Save yourself the trouble, and make clean up a breeze by using paper muffin liners. I buy the Wal-Mart brand for about $2 for a huge stack of them.
  • Use a light hand when mixing. Mix just until the ingredients come together and the flour is absorbed. This prevents very dense rolls.
  • Serve with butter or jam. These rolls are pretty plain on their own, so they need a little help if you're not serving them for dunking into soup. Brushing the tops with butter, and spreading butter on the cut roll gives it a big boost of flavor!

What to Serve with Mayonnaise Rolls

Since these easy rolls use just 3 basic ingredients, they don't have the depth of flavor that typical lard or butter containing roll would have. Instead, they make a great quick and easy yeast free dinner roll that lends itself perfectly to dipping and dunking into hearty soups. Or even cleaning the plate of any remaining gravy. Muffin Liners: Be sure to line your muffin pan with paper liners for an easy cleanup. These dinner rolls are VERY sticky, and so they can be difficult to get out of even a well greased muffin pan. For your own sanity, and for the sake of whomever is on dish duty, please use paper liners!
