Ingredients list for the Marinated Tomato Salad
- 4 cups quartered cherry or grape tomatoes
- 1/4 cup vegetable or extra virgin olive oil
- 3 tablespoons apple cider vinegar
- 2 teaspoons Italian seasoning
- 1/2 teaspoon salt
- 1 1/2 teaspoons honey or sugar
- Fresh chopped basil

Directions
1.To make the marinated cherry tomato salad: In a small bowl, combine together oil, apple cider vinegar, Italian seasoning, salt, and honey.
2. Pour the dressing over cherry tomatoes in a serving dish, and gently stir to coat well. Chill in the refrigerator for at least 2 hours. Just before serving, gently stir from bottom to top, coating all tomatoes. Garnish the cherry tomato salad with fresh chopped basil and sprinkle with kosher salt and fresh cracked black pepper. Enjoy!
Tips for the marinated cherry tomato salad
The hardest part to this marinated tomato salad is trying to not eat it while making it!If you want to further liven up your cherry tomato salad and add a nice depth of flavor, a light drizzle of balsamic glaze is a great addition!
What tomatoes should I use for the salad?
If you prefer grape tomatoes, those work just as well and are so delicious. If you’re up of a splash of color, use a mix of red, yellow, and orange tomatoes, it makes for quite a gorgeous side dish with very little effort involved.
Can I substitute other herbs for the tomato salad?
If you don’t have basil on hand, you can use parsley, dill or chives instead and the flavor will still be amazing. Just make sure to use fresh herbs as we already use Italian seasoning in the dressing.
What to serve with the cherry tomato salad?
This marinated tomato salad is light, refreshing, and goes with pretty much everything from chicken or corn fritters to marinated chicken fresh off the grill! You can even put this tomato salad ON another salad and use it as an add-on for a leafy bed of lettuce or pasta salad.
How to store the marinated cherry tomato salad?

You may have to toss up the tomato salad leftovers to redistribute the dressing and the juices before you serve.The dressing can be made up to 3 days ahead and stored in an airtight container in the refrigerator.
