Sometimes I feel like my recipes need to be a little extra, to keep up with all the other bloggers out there. But as much as I try I keep going back to simple.

Someone tried one of my recipes. They then wrote back to me to say they made it with a twist, adding a couple of extra things to it.

Whilst you are welcome to put your twists to the recipes, just know that I am a very “plain Jane”. I don’t like too much going on with my food.

Even if I was rich I will still stick to food I know and love. For me that would be simple foods that I have come to love.

And I know I don’t post a lot of healthy stuff or too many veggie dishes. There’s a reason for that.

It’s not that I don’t eat veggies. I do eat a lot of them. But often I stick to veggies I love and I will probably use the same recipe over and over again.

It doesn’t make sense to repeat my recipes. Yes, on the odd occasion I will try something new but for me to post that it’s got to be really good.

Besides I never claimed this to be a healthy food blog. This is a blog where we create healthy memories, just not healthy food.

Let’s get back to these cheese muffins. One day I was at a “friend’s” house and I remember her asking me to make some mini cheese muffins.

She gave me a recipe from an old cookbook she had. All I remember is that it was a very simple recipe.

I always wanted to ask for the recipe. However, I know a lot of people are not very keen to share their recipes and I think she would probably be one of those.

Rather than being told no, I thought I will create my own little recipe. Using simple ingredients, of course.

This very simple recipe turned out great. I love the taste and I used ingredients that can easily be found in your pantry.

Ingredients Required

For this recipe you will require butter, milk, egg, self-raising flour, bicarbonate of soda, cheddar cheese, spring onion, granulated sugar, salt and cayenne pepper

This is one of those basic cheese muffin recipes. If you want to be extra add some spinach, feta, chives, parsley, sun-dried tomato. The list is endless.

How to make these muffins

Melt the butter and mix it together with the milk and egg. Mix all the dry ingredients together, the add the liquids to it.

How easy is that. This recipe makes 12 muffins. You can use a 1/4 cup of batter per muffin.

I didn’t use any cupcake liners for this recipe. I greased the pan a little just to be extra cautious.

Ingredients

  • 1/4 cup butter, melted
  • 200 ml milk
  • 1 large egg room temperature
  • 1&1/2 cup self-raising flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/4 teaspoon salt
  • 2 tablespoon granulated sugar
  • 1/2 teaspoon cayenne pepper
  • 1 cup grated cheddar cheese
  • 1 spring onion, chopped

Instructions

  • Preheat the oven to 180 degrees Celsius. Grease a muffin pan and set aside

  • Melt the butter and add it to the milk together with the egg. Beat it well and set aside

  • In a large bowl mix the flour, bicarbonate of soda, salt, sugar, cayenne pepper, cheese and spring onion. Add the liquid to the dry ingredients and fold the ingredients in until well combined. Do not over mix.

  • Pour the batter into the prepared muffin pan. I add about a 1/4 cup of batter per muffin

  • Bake at 180 degrees celsius for 15 minutes or until the tops are golden brown or a toothpick comes out clean

Notes

  1. These muffins can be stored up to three days in an airtight container
  2. Muffins can be frozen for up to a month. They must be thawed before they are eaten and can be warmed slightly
  3. There are many variations that can be used to customise your muffins. You can use spinach, feta, parsley, sweetcorn, chives, sun-dried tomatoes, mozzarella. The list is endless
  4. If the cayenne pepper is too much for your taste buds you can reduce the quantity
  5. If you are using cake flour or all purpose flour add a teaspoon of baking powder together with the bicarbonate of soda
  6. I always use salted butter in my baking. Therefore I don't always add salt. For this recipe I added a little extra salt as it is a savoury muffin.
