Two childhood favorites come together in this super easy no-bake treat! Graham crackers and milk chocolate add a S’mores spin to the beloved Rice Krispies Recipe! This is a fun recipe where the campfire is optional!

I can usually gauge what our summer was like by how many campfires we had. If we had a lot of campfires that means the pace was slow and we were home (hello quarantine), therefore this year has been a little bit of an anomaly.

The past few summers have been too busy and too hot to enjoy too many S’mores around the campfires. This usually makes me a bit sad, because, for me, campfires are the best kind of family time!

We can be silly around campfires, we tell stories, talk about REAL things, and best of all, the electronics are inside.

Aside from S’mores, if there is one thing EVERYONE knows how to make it is a classic Rice Krispie treat! I think those are the first recipe everyone starts with when they are learning to bake. Rice Krispies are easy and are consistently delicious! No matter how old you are, you cannot resist the allure of a Rice Krispie treat!

Rice Krispie treats were invented in 1939 by a Kellog employee raising money in a bake sale. They were an instant hit and have stayed that way ever since.

While the recipe is basic, there can are variances to the recipe that are largely a personal choice. Some people use more or less butter, some add less cereal, some dot the tops with marshmallows to make them extra chewy. People find the method that gives them the treat they love and they stick with it.

What Do I Need To Make This S’Mores Rice Krispies Recipe?

Graham cracker squares

Milk chocolate bars – I used Hershey Bars

Unsalted Butter

Marshmallows – I used mini marshmallows because they will puff up less and because of their size, they melt a lot quicker.

Marshmallow fluff

Rice Krispie cereal

How Do I Make S’mores Rice Krispie Treats Recipe?

STEP ONE – Line an 8 x 8 inch baking pan with parchment paper. Arrange graham crackers on the bottom of your baking pan. Place two chocolate bars over the graham crackers. Broil for 2 minutes or until chocolate has melted. Smooth chocolate over crackers.

STEP TWO – In a large stockpot, melt butter over medium heat. Stir in 4 cups marshmallows and the marshmallow fluff until melted. Remove from heat. Stir in cereal.

STEP THREE – Chop 2 ½ chocolate bars and fold into the cereal. With a rubber spatula, carefully spread the marshmallow mixture over the graham crackers.

STEP FOUR – Top the cereal with remaining the marshmallows and broil 2-3 minutes or until puffed and golden. Remove.

STEP FIVE – Chop the remaining 1 ½ bars of chocolate and place on top of the toasted marshmallows. Cool completely.

How Many Rice Krispie Treats In A Batch?

Since this recipe is made in 8 x 8 inch pan, you will get about 16 squares. BUT how you decide to cut up and divide your squares is entirely up to you!!

This recipe can easily be doubled and prepared in a 9 x 13 inch pan.

How Long Do I Let The Rice Krispie Treats Cool?

If you are like my kids, then the answer is you don’t, you just dig in!

It is best to allow the Rice Krispie treats to cool in the pan for at least 30 minutes. This will allow time for the marshmallows and the chocolate to set properly.

Why Are My Rice Krispie Treats So Hard?

Believe it or not, the cooking temperature is the culprit here.

If you’re making the treats on the stove-top, make sure you melt the butter and marshmallows together on low.

Cooking the mixture on medium or high will cause your marshmallows to get too hot, turning the sugar in the marshmallows into hard candy.

You can remedy this by microwaving your treats for just a few seconds before eating them.

How long do Rice Crispy Treats last?

Rice Krispie Treats will stay crispy and fresh if stored in an airtight container (if you use salted butter they will last a full week). Otherwise, these treats will last 3-4 days.

These marshmallow cereal treats will taste best when consumed right away.

Will This S’mores Rice Krispies Recipe Go Bad?

Unfortunately, yes, these treats can go bad because they are made with butter and butter can turn rancid.

Butter will go bad if it is left at room temperature for too long.

Using salted butter will help your treats stay fresh up to a week if left at room temperature.

Store your Rice Krispie bars covered in an airtight container.

Can you freeze marshmallow cereal treats?

Normally, yes.

However, because these treats have a layer of marshmallow on top, I would not advise freezing this recipe.

S’more Rice Krispies Recipe Tips

  • Milk chocolate bars are my go-to when it comes to making S’mores, but you can use dark chocolate in this recipe! The dark chocolate will be a nice contrast to the sweet marshmallows!
  • To make the cereal mixture easier to spread, I like to spray my rubber spatula with non-stick cooking spray. This will keep the cereal sticking to the spatula. Wax paper can also be used.
  • Feel free to add a little vanilla extract to the butter mixture!
  • Using a combination of marshmallows and marshmallow fluff makes an exceptionally creamy, gooey filling, you could use more or large marshmallows in this recipe.
  • While technically you can use expired or older marshmallows, they will not melt the same as freshly purchased marshmallows.
  • This recipe can be made gluten-free by using gluten-free cereal and graham crackers.
  • To get really gourmet, brown your butter first before adding the marshmallow mixture!
