Savoury Cheddar Onion Scones – – Teatreatery (1)

When it comes to tea treats, not all of them have to be sweet. I do prefer sweet treats with my tea, but that would limit my recipe choices. So I decided to stretch out and do some experimenting with some savoury items. The first on my list is my recipe for Cheddar Onion Scones. I know traditionally scones are served with tea, but I usually whip these up to have whenever I make soup or chilli. I like to believe that scones are versatile little treats.

The Dough:

Savoury Cheddar Onion Scones – – Teatreatery (2)The base dough for these scones isn’t much different than the other scone recipes I have on my website, except they contain a lot less sugar. I add in slightly caramelized onions and a sharp cheddar, both of these items add a lot of flavour to the scones. You want to make sure that you give the onions time to cool before you add them into the dough. Another thing that I should point out is that the mixture might seem super dry when you first start mixing it, but once you get your hands in there and knead it, it will come together. Though if there is still a lot of remaining dry ingredients in the bottom of the bowl you can add another tablespoon of milk, but don’t add too much. You do not want a wet, sticky dough for scones.

Use and Storage:

As I previously stated, these scones are the perfect accompaniment to soups, stews, or even chilli. I also like to warm them up and have one with my eggs in the morning instead of a piece of toast. As for storage, baked scones can be kept in an airtight container for a couple of days before their quality falters. Since the recipe does make close to 20 scones, I usually freeze most of them and bake what I need. Scones are super easy to bake even when frozen and can keep for a month or two unbaked in the freezer.

Ingredients

  • 1 small diced onion approx. 3/4 cup
  • 2 cloves chopped garlic
  • 1 tbsp butter (for pan)
  • 2 1/2 cups (405g) flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (180g) cold butter, cubed
  • 3/4 cup milk
  • 1 egg
  • 1 1/2 cup (150g) shredded sharp cheddar cheese

Instructions

In a small pan, caramelize the garlic and onions in butter. Cook until onions have turned slightly brown. Set aside to cool.

In a large bowl, whisk together flour, sugar, salt, and baking powder.

Cut cold butter into cubes and add them to the flour. Using either knives or a pastry blender, blend the butter into the flour until the butter is broken down into tiny pieces.

In a small bowl, beat egg and milk together and pour over the flour and butter. Add in onions and cheese.

Mix with a wooden spoon until most of the flour is mixed in.

Finish the dough off by kneading until everything is incorporated. The dough should not be sticky.

Divide the dough in half and flatten one half onto a lightly floured work surface (should be about 1/2 inch thick). Using a 2 inch round cutter, cut out scones and place them onto a parchment-lined pan.

Repeat the above step for the second half of the dough.

Combine the leftover dough scraps and continue flattening and cutting out your scones until the dough is used up. I usually shape the last little chunk of dough into a scone.

Place pan into the freezer for at least 30 minutes.**

Heat oven to 400℉

Brush the top of the scones with milk or heavy cream before placing them into the oven.

Bake for 20- 25 minutes. You want just a little brown around the edges of the scone.

Let cool and enjoy. Serve warm with butter.

Notes

Once they have been on the pan in the freezer you can remove some of the scones and place them into a freezer bag to keep frozen until you need them.
