Make it Your Own

I’m not a big spice person, so believe me when I say this is so good and isn’t overly spicy. However, if you’d rather, feel free to use sweet Italian sausage instead! You could also sub sweet potatoes if you’d like. The choice is yours! You can also add in additional veggies such as celery, zucchini and more, depending on what your favorites are!

Immune Boosting

I love to nourish my body as often as possible, while never ever compromising taste. It’s no secret that with cooler weather comes cold and flu season, and I like to do my best to prepare my body with mentioned nourishment all year long by making healthy and immune strengthening soups to warm up with.

An easy way to add powerful nutritional benefits to your soup is by making them with bone broth. You can make your own, which plenty of people do, but I typically don’t have time, so I opt for grabbing a high quality pre made bone broth. High quality bone broth can aid in your total-body wellness, which includes immunity, joint healthy, hair, skin and nails and even brain function.

Ingredients

  • 1 lb spicy Italian sausage (can sub sweet sausage, check for compliance depending on dietary needs)
  • 1 tbsp avocado oil or olive oil
  • 4 cups chicken broth or chicken bone broth
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups kale, chopped
  • 1 lb bag gold potatoes, cubed
  • 1 cup coconut milk
  • 1 14.5 oz can diced tomatoes (check for compliant ingredients, need be)
  • 1 tsp salt
  • ½ tsp pepper
  • 6 strips sugar free bacon, cooked & chopped (optional)

Instructions

  • Brown the sausage on the stove over medium heat in 1 tbsp of avocado oil or olive oil.

  • While the sausage cooks, prepare all the remaining soup ingredients aside from the bacon.

  • Stove Top Option- Put all the ingredients into a pot on the stove and simmer until the potatoes are fork tender.

  • Slow Cooker Option- Put all the ingredient into the slow cooker and cook on high for 3 hours or low for 6 hours or until potatoes are fork tender.

  • While the soup cooks, cook the bacon on the stove or the oven (up to you!) then crumble pieces over the top when serving.
