I love scones and have made many of them on this blog including my own cheese scones recipe that featured in my cookbook Simply Scottish Cakes And Bakes (now in its 3rd print run and available in paperback as well as hardback additions).

This time I wanted to make really basic and simple cheese scones using as few ingredients as possible – so these 3 ingredient cheese scones were born. Or should that be baked?

Ingredients for 3 ingredient cheese scones

Yes, there really are only 3 ingredients in this easy cheese scone recipe and you probably have them in the kitchen already.

Cheese – I use mature cheddar cheese for my cheese scones but any hard cheese will do really. Remember you get more flavour from a mature cheddar than a mild one.

Flour – self-raising (baking flour in USA) please. This type of flour already has raising agents added to it and is ready-sieved when you buy it.

Greek yoghurt – This gives you the fat element for your cheese scones. It replaces the egg and the butter you would usually use when making scones. You can make your own homemade Greek yoghurt too of course.

The only other ingredients here are a pinch of salt and whatever you want to use to glaze your cheese scones before baking. I used an egg and milk glaze but you could use just milk or egg, whatever you like. You don’t even have to glaze scones when baking them but it does give them a gorgeous golden colour.

Adding different flavours

These easy 3 ingredient cheese scones can be personalised to exactly how you want them with the addition of your favourite flavours.

Here are a few things you might like to add to ring the changes once you’ve got hooked on making these easy 3 ingredient cheese scones;

Black pepper or smoked paprika. These give a lovely warm kick to your cheese scones. Chilli gives even more of a kick!

Herbs – I like to use finely chopped rosemary, sage, thyme, oragano or chives in my cheese scone mix. You can use dried herbs instead, remember to use less dried herbs as they are stronger in flavour than their fresh counterparts.

Mustard – another nice warming ingredient to add to your cheese scones. I like to use English mustard powder but you could just add a spoonful of your favourite mustard to the mix.

You could also try adding curry powder or harissa to your cheese scones for fun flavour.

How to make 3 ingredient cheese scones

Quite honestly folks this scone recipe couldn’t be easier or quicker.

Simply put all three ingredients into a bowl and mix well. You are making a dough here so get your hands in there and squish it all together. If you need a wee bit more liquid then add another spoonful of Greek yoghurt to the mix.

Roll out your cheese scone dough on a lightly floured surface to about 2cm (1″) thiack and cut out your scones.

I used a 7cm/2″ fluted cutter to cut out my cheese scones and got 12 from this recipe. Once you cut out all the scones from your first roll of the dough, bring it all back together again and roll it out and cut out more cheese scones till all your scone dough is used up.

Place your 3 ingredient scones onto a lined baking tray and bake at 180C for about 20 minutes till golden.

I used an egg and milk mix as a glaze on my cheese scones to get a lovely golden look. You can use water, milk, egg or a mix of milk and egg to glaze your cheese scones. Or you can leave them unglazed when baking.

Once you’ve baked your 3 ingredient cheese scones you can serve them warm straight from the oven or set them on a wire rack to cool a little.

How long do they keep?

Any scones are always at their best on the day that are made but these cheese scones will keep for up to 3 days in a sealed container. I like to warm them up a little in the oven before I serve them and this really revives them.

You can freeze these 3 ingredient cheese scones for up to 4 months. Defrost thoroughly and warm in the oven before serving.

Serving ideas

I love serving cheese scones with a hearty bowl of soup either for lunch or for a light supper dish.

Serve your cheese scones with a nice glass of wine. I like gfillilng mine with juicy ham and a little salad or maybe some smoked salmon.

Use a smaller cookie cutter and make mini cheese scones to serve as a party nibble or appetizer.

  • 300 g self-raising flour
  • 150 g cheddar cheese grated
  • 275 g Greek yoghurt

Instructions

  • Preheat oven to 180C and line a baking sheet with baking paper

  • Mix all ingredients in a bowl and add a pinch of salt

  • Roll out scone dough to 2cm/1" and cut out scones with 7cm/2" cutter

  • you can glaze the scones with water, milk, milk and egg or egg if you like. This adds a a lovely golden glaze to your scones

  • Bake for approx 20 minutes at 180C till golden
